Novac grape variety was obtained in 1987 through individual selection from the variety Negru vartos and variety Saperavi. The wine has a ruby-red colour, full-bodied, fine tannins and good acidity.
A real distinguishing mark of viticulture in southern Romania, the Novac variety from the Castel Bolovanu displays a whole "fruit basket" (blueberries, ripe cherries), complemented by fine shades of chocolate and a lot of liveliness.
Ideal pair for grilled meat, goulash, roasted vegetables and hard cheeses.
